BROWN RICE NOODLES WITH VEGETABLES AND RED CURRY
A quick and easy meal, but also full of vegetables and flavor? Then these rice noodles with vegetables and red curry are just what you’re looking for!
Ingredients
- 225 gr Fairtrade Original Thai Brown Rice Noodles
- 1 packet Fairtrade Original Red Curry Spice paste
- 400 ml Fairtrade Original Coconut Milk
- 1 onion, chopped
- 400 gr washed spinach
- 200 gr peas
- 200 gr bimi, blanched
- 100 gr green asparagus tips, blanched
- 1 spring onion in rings
- 2 tbsp chopped parsley
- 4 tbsp peanuts chopped
- 1 tbsp oil
Preparation

Fry the onion in a little oil until glazy and add the spinach. Fry until the spinach has shrunk.

Stir in the herb paste, pour in the coconut milk and bring to a boil, stirring.

Blanch the bimi and green asparagus.

Add the peas, bimi and green asparagus to the red curry.

Prepare the rice noodles as directed on the package.

Divide the rice noodles among 4 bowls and spoon the red curry on top. Top with spring onion, parsley and chopped peanuts.
